The cap or “knob cap” (AMS-25272) is a cover piece that fits over or onto the knob to provide the final exterior appearance (often black, sometimes with a marking line). In some product listings, the knob is sold under part #25271 (the main body), while the cap is sold under #25272. The knob + cap are intended for detented encoders in Nord instruments — i.e. encoders that provide tactile “clicks” as you rotate. The “with detent” clause in the listing implies it’s not for smooth encoders.
